With an illustrious culinary career in hospitality spanning more than 25 years across the globe, Chef Mette will bring phenomenal dining experiences for gastronomes right in the center of Sapa.
Mette shows his distinctive German discipline and creativity in his craft. For him, cooking is a form of edible art, and no acclaimed work of art should be created from stereotypes. It is the eccentric and ingenious details that linger in every culinary journey.
Chef Oliver Mette brings his years of leadership experience in the kitchen within various world-class luxurious hotels and resorts to his new role. Nurturing his passion for cooking and traveling from a very young age, the German chef - with positive energy and a quick smile - started his first chapters as a Commis for first-rate hotels in Germany such as Marriott, Hotel Palace. This was the moment he embarked on the greatest adventure of his life – a culinary voyage where he undertook the most important positions in world’s top 5 star properties such as Intercontinental Hotel, Sheraton Hotel, Renaissance Hotel, Hideaway Beach Resort & Spa, based in Germany, Switzerland and the picture-perfect Maldives. He is also a member of Escoffer International (Global French Cooking association).
Diversity is always Chef Oliver Mette’s top priority when it comes to ingredients. The inventive culinary artist enjoys ‘’playing’’ with the nutritious locally sourced materials. For him, it is local ingredients that enhance the destination experience and leave a long-lasting impression on travellers. Mette especially swears by lemongrass and ginger, the two local spices that can be found in every Asian kitchen, since they create beautiful nuances in flavor and are versatile when it comes to dressing. With over 10 years of experience as an Executive Chef in top-rated hotels in Switzerland, where beauty manifests itself in the mountain peaks, Chef Oliver expects a familiarity with Sapa, Vietnam’s own Mountain wonderland.
Holding Paul Bocuse, the legendary French cook in especially high regard, Mette admits ‘’favouring’’ French gastronomy, from its formal techniques, emphasis on fresh ingredients and simple flavors, pride in presentation, and rich and colorful history. He ‘’j’adore’’ combining various French techniques, which was built for both efficiency and flair, yet based on a set of very simple foundations, with local ingredients for the ultimate gourmet masterpiece. Celebrating an enchanting mix of Parisian Haute Couture and traditional Hill Tribe garments, Hotel de la Coupole would be a perfect place for Chef Oliver to bring his personal culinary journey to the table.
Chef Oliver Mette will be leading Sapa’s most dynamic suite of culinary outlets at Hotel de la Coupole’s Chic Restaurant, Absinthe Bar and Cacao, where guests can indulge in a gastronomic menu of modern French dishes crafted from the finest local ingredients or enjoy an aperitif or after dinner cocktail in warmth and comfort, with tranquil and uninterrupted views of the Sapa skyline and stunning misty mountains.
